What to Eat in Xiangxi
Tongye Baba(桐叶粑粑)
In Xiangxi Tujia and Miao Autonomous Prefecture, there is a delicious pastry-Tongye Baba that is popular with locals. It is made of glutinous rice powder and long-shaped rice powder and mixed with sweetened bean paste, or soybean meal, diced spicy bean curd, diced preserved meat and vegetables. Apart from the ingredients mentioned above, a variety of grain can be made for the snack, such as fermented polished round-grained rice, corn and wheat. Wrapped with fresh and moderate leaves of Vernicia Fordii into funnel shape, Tongye Baba gives off a special fresh fragrance after steamed.
Shefan(社饭)
The most important raw material in Shefan is wild tarragon, which can be found in many places. First, Tarragons should be chopped up on a chopping block. Then, squeeze out the juice, which is bitter, and then put some oil into the pan, and cook the tarragon until they send out an inviting smell. Soak sticky rice overnight until it swells. In some places rice is also added to make it less oily. Find a piece of well-marbled bacon, wash it, cut it into small chunks and cook it until it gives out a good smell. Mix the tarragon and the sticky rice evenly. Mix the tarragons, the sticky rice with the bacon (add some peanuts if you like), and then steam them in a steaming basket. Finally, the delicious dish is ready.
Tujia Cured Pork(土家腊肉)
The Tujia people in West Hunan have a tradition to make cured pork. A piece of well-cured pork can stay fresh for half a year. It can be used for making sour and spicy soup or stir-fried with condiments.
Miao Sour Fish(苗族酸鱼)
It is the traditional famous food, which enjoys the high reputation among the Miao people in Fenghuang County. Miao people have a tradition to breed fish in rice paddy. After harvest, Miao people discharge the water in the rice paddy and then catch the fish easily. The Miao Sour Fish is a unique dish for a banquet given by the Miao people in West Hunan. The fish is kept in a jar whose lid is sealed with water. The fish will not go bad in one to two years if the lid is air-tight.
Liu Xiaoqing's Rice Tofu(刘晓庆米豆腐)
Liu Xiaoqing, known as a famous actress in China, once acted as a peasant woman making a living by selling rice tofu in the movie Furong Town. When come to Xiangxi Prefecture, It is a must-do to taste Liu Xiaoqing's Rice Tofu while travelling in Furong Ancient Town.
Xuebaya(血粑鸭)
Xuebaya is a dish fried with duck meat, duck blood and sticky rice. It is one of the most distinctive dishes in Xiangxi, if not, in Fenghuang. How to make it? First, soak the sticky rice in the water, then put it in a bowl. Second, slaughter the duck and let its blood dropping in the rice so that they can mix together. When the blood is caky, steam it before setting it aside and cutting it into patches. Next, fry it with vegetable oil. Then stew the duck until it is well-done, and at this time place the blood and rice in the duck and add some condiments to it. Finally, the delicious dish is ready.
