Zhejiang Dining
As one of the great eight traditional cuisines in China, Zhejiang cuisine has a great deal of representative dishes that you could taste if you have chances travel there. Here are some of them.
- West Lake Fish in Vinegar Gravy (西湖醋鱼): It is cooked grass carp which is sprinkled with sugar vinegar. As a traditional local dish in Hangzhou, it has a long history which could trace back to South Song Dynasty (AD 1127--1219).
- Dongpo Braised Pork(东坡肉): Stewed pork with brown sauce.
- West Lake Water Shield Soup(西湖莼菜汤): A soup that is cooked with shield brasenia schreberi, chicken breast meat and ham.
- Fried Shelled Shrimp with Dragon Well Tea(龙井虾仁): Stir-fried peeled prawns with Longjing Tea, eggs, starch and cooking vine.
- Stir-Fried Bean Curd Rolls Stuffed with Minced Tenderloin(干炸响铃): Stir-fried pork with Tofu skin.
- Steamed Pork Slices with Flour in Lotus Leaves(荷叶粉蒸肉): It uses seasonal lotus leaves, stir-fried rice and seasoned pork as ingredients. The dish can be traced to the late Qing Dynasty.
- Steamed turtle in Crystal Sugar Soup(冰糖甲鱼): Braised turtle in crystal sugar soup with various seasonings.
- Braised Bamboo Shoots in Wine Sauce(糟烩鞭笋): Stir-fried and braised bamboo shoots.
